Spicy Bean "Quesadillas" Recipe

Ingredients

  • 24 Triscuit 40% Less Fat Crackers
  • 1/4 cup refried beans
  • 1/2 cup shredded Tex-Mex cheese blend
  • 1/4 cup salsa

Instructions

  • Top  each of 12 of the crackers with 1 tsp. beans, 2 tsp. cheese and 1 tsp. salsa. Cover with remaining crackers.
  • Place  6 topped crackers on microwaveable plate. Microwave on HIGH 10 to 15 sec. or until cheese is melted. Repeat with remaining crackers.

Recipe Tips

Special ExtraGarnish with black olive slices and fat free sour cream.
