Lamb Seekh Kababs Recipe

Ingredients

  • 1 onion, quartered
  • 1 cup fresh coriander (cilantro)
  • 1/2 cup fresh mint
  • 1 piece (1 inch) gingerroot, peeled
  • 2 cloves garlic
  • 1 lb. (450 g) lean ground lamb
  • 12 Ritz Crackers, finely crushed (about 1/3 cup)
  • 1/4 cup feta with oregano, sun-dried tomatoes and cracked peppercorns cheese
  • 1 egg
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. garam masala
  • 1 tsp. ground cumin
  • 1/2 tsp. red chili powder or cayenne pepper

Instructions

  • Heat  greased barbecue to medium-high heat.
  • Process  first 5 ingredients in food processor until finely chopped; transfer to large bowl. Add remaining ingredients; mix well.
  • Divide  meat mixture into 12 (1/4-cup) portions. Shape each portion into 6-inch-long sausage shape on 12-inch skewer, pressing meat mixture gently into skewer to secure.
  • Grill  8 to 10 min. on each side or until done.

Recipe Tips

Variation For a change of pace, omit the skewers and shape the meat mixture into 4 (1-inch-thick) patties. Grill as directed.
