Ice Cream-Cookie Wiches Recipe

Ingredients

  • 24 Chunks Ahoy! Cookies
  • 3 cups chocolate ice cream, slightly softened
  • 3/4 cup flaked coconut, toasted

Instructions

  • Top  each of 12 cookies with 1/4 cup ice cream; cover with remaining cookies to make 12 sandwiches.
  • Roll  edges in coconut.
  • Freeze  1 to 2 hours or until firm.

Recipe Tips

Variation Prepare using your favourite flavour of ice cream, sherbet or frozen yogurt. In addition, roll edges in chopped peanuts, coloured sprinkles or chocolate chips instead of the coconut.
